How to make ice cream

 

There’s not just a national day for it, but in fact even a whole month dedicated to this frozen dessert, which is really no surprise given that ice cream is now so popular! With many ice cream machines now available to buy, it therefore seems only fair to have easy ice cream recipes available for everyone to try and taste. We’re talking (or rather, decadently dreaming) about a vanilla ice cream recipe, a chocolate ice cream recipe and a coffee ice cream recipe. Want to make ice cream at home but not totally sure where to start? Well, this is where Annette Yates’ new book comes in handy! Vanilla and Chocolate Chip Ice Cream 

Serves 4 – 6

TOP TIP:

For the best flavour, use natural vanilla (extract or essence) and not an artificial flavouring.

Ingredients:

  • 284ml carton double cream, chilled
  • 250g/9oz low fat natural yoghurt, chilled
  • 6 level tbsp icing sugar
  • 1 tsp vanilla extract
  • 100g packet chocolate chips

Method: 

1)  Tip the cream into a jug and add the yoghurt.

2)  Sift the icing sugar over the cream and yoghurt, and add the vanilla.

3)  With a whisk, stir until smooth.

4)  Tip the mixture into the ice cream machine and freeze according to instructions.

5)  Add the chocolate chips during the final minute or two of churning.

6)  Transfer to a suitable container and freeze until required.

Coffee and Walnut Ice Cream 

Serves 6.

TOP TIP:

Use a good quality instant coffee.

Ingredients:

  • 3 tbsp good quality instant coffee granules
  • 150g/5 ½ oz golden caster sugar
  • 55g/2oz walnuts
  • 284ml carton double cream

Method:

1)  Put the coffee and sugar into a large jug, and pour over 300ml/ ½ pint boiling water, then stir until the coffee and sugar have dissolved. Leave to cool.

2)  Finely chop the walnuts.

3)  Stir the walnuts and cream into the cooled mixture.

4)  Cover and refrigerate for about 30 minutes or until well chilled.

5)  Tip the mixture into the ice cream machine and freeze according to instructions.

6)  Transfer to a suitable container and freeze until required.
